Gooey No Bake Cadbury Creme Egg Cheesecake Recipe

So it's been a little while since I shared a recipe with you all and being a lover of the Cadbury Creme Egg I thought I'd share this recipe with you before the season ended. This recipe is utterly indulgent just like my creme egg brownies, which you can find the recipe for here, and it tastes just as delicious. This will make a great easter dessert to share with friends and family, or all to yourself, and best of all there is no baking involved, just some chill time.

Prep Time: About 30 minutes
Cooking Time: None!!
Chill Time: 3 hours + (ideally overnight)
Serves: 8-10

Ingredients:

310g Digestive Biscuits
140g Unsalted Butter, melted
560ml Double Cream, whipped
140g Icing Sugar
560g Full Fat Philadelphia (Two Large Tubs)
1/2 Juice of a lemon
1/2 Juice of a lime
3 bags of Cadbury Creme Egg Mini's, chopped
Full Size Cadbury Creme Eggs - to decorate quantity to your hearts desires.
Milk & White Chocolate to decorate
Yellow Icing to Decorate

Method:

  1. Crush your digestives until they are in large crumbs and mix in the melted butter
  2. Press the biscuit-butter mixture into the bottom of your springform tin (I use 7")
  3. Combine the whipped cream, with the cream cheese, and lemon and lime juice. Then sift in the icing sugar and combine well - I find this takes a lot of arm power.
  4. Fold in the chopped Creme Egg mini's until well distributed and smooth on top of your biscuit base until level
  5. Chill for a minimum of 3 hours in the fridge, not freezer, ideally overnight
  6. Remove the cheesecake from the tin
  7. Melt your various chocolates and drizzle over your cheesecake. Ensure the chocolate isn't too hot or you could melt the cheesecake a little
  8. Drizzle over your yellow coloured icing
  9. Cut your full size creme egg's in half and decorate the top of the cheesecake. If you chill them before you cut them it is slightly less sticky and gooey. Try and stick them onto the drizzled chocolate and icing to help them stick.
  10. Once set, cut the biggest slice you dare and enjoy.

Let me know if you try the recipe and what you think. I love that it doesn't require baking and can be whipped up really quickly. Make sure to follow me on Bloglovin', Insta, Twitter and Pinterest too for more recipes and to keep up to date with future posts. There is a chocolate fudge Easter cake coming next week which Bruce Bogtrotter would be proud of.
