This week is host to Macmillan's Worlds Biggest Coffee Morning on Friday 29th September. At work we have already hosted our coffee morning for the charity as we had a team meeting yesterday which was guaranteed to draw a large crowd to our office when people are normally on site. Naturally we pounced on this to raise the most money. Currently our total stands at over £200 and is continuing to grow from donations on our construction sites who hosted their own mini mornings.

Macmillan World's Biggest Coffee Morning


Macmillan is a charity who helped when my grandad needed palliative care by providing nurses in the home where he was place after helping us to find a suitable place for him to be homed. Watching a loved one suffer and pass away from cancer means that it is something that I am passionate about fighting and raising money to support others who have no choice but to fight. By 2030, it is estimated that 4 million people in the UK alone will be living with cancer with one in three of us being impacted by it - which by my standards is just too many. This is why I am proud to be a charity champion for my company for Macmillan. Naturally the idea of a coffee morning sounded great to me and my inner Mary Berry just couldn't resist baking something for the event. Actually I baked twice.

Jaffa Cake Brownies Recipe

Recipe Information:

Preparation Time: 20 minutes
Cooking Time: 25 minutes
Oven Temperature: 180 degrees C/350 degrees F (Fan)
Baking Tin: 8" Square
Serves: 16 Brownies

Ingredients:

For the Brownies:
  • 115g Butter (Unsalted)
  • 170g Milk/Dark Chocolate 
  • 2 Eggs (Medium) (Beaten)
  • 1 tsp Orange Extract
  • 140g Caster Sugar
  • 85g Plain Flour
  • 2 tbsp Cocoa Powder
  • 20 Jaffa Cakes
For the Orange Topping:
  • 3 tbsp Orange Marmalade
  • 3 tbsp Orange Juice

Method:

For the Brownies:

  1. Preheat your Oven
  2. Grease your baking tin and line with grease proof paper leaving a little bit extra paper higher than the sides for the topping and removal (ensure to do this well as it will be a big help at the end when you remove your brownies).
  3. Prepare a saucepan of boiling water on a low heat.
  4. Break the chocolate into a heat proof bowl and add the butter. Then place this bowl over the saucepan so the chocolate and butter start to melt. Stir constantly and watch carefully so the chocolate doesn't burn. 
  5. Once melted together take the mixture off the heat and mix in the eggs and orange extract.
  6. Mix in the sugar.
  7. Sift in the flour and cocoa powder and fold into the mixture until just combined.
  8. Pour half of the mixture into your lined tin.
  9. Gently place a layer of Jaffa Cakes on top of the mixture in the tin
  10. Pour the remaining mixture on top of the Jaffa Cake layer until all Jaffa Cakes are evenly covered and hidden under mixture
  11. Cut the remaining Jaffa Cakes in half and push into the mixture at angles to decorate
  12. Bake for 25-30 minutes. If you prefer brownies slightly gooey then remove them from the oven just before. TIP: You might wish to cover the top of the baking tin with foil while in the oven to stop the exposed Jaffa Cakes from burning
  13. Let the brownies cool completely.
For the Orange Topping:
  1. Place the orange marmalade and orange juice into a small saucepan over a gentle heat. 
  2. Stir until the mixture combines and becomes a sauce 
  3. Drizzle the sauce over the brownies
  4. Wait for the sauce to set slightly and then cut into brownies and serve

The brownies are really delicious and gooey and taste amazing warmed slightly in the microwave and served with ice cream too. They completely sold out at yesterday's event which made me really happy and I think serves as a good review of how yummy they really are.
